In 1994, Roy Hardy, the owner established relationships with farmers in Guatemala, Nicaragua and Mexico. He continues these personal relationships and travels to these countries to work and educate the farmers and to buy their green coffee. Roy is continually seeking new relationships with farmers in other coffee producing countries.
The Name
Theodore Pistol came from a Italian family with three generations of experience of blending and roasting coffee. Unlike many newcomers to the coffee business, Pistol grew up understanding that the taste of the beans was not in the roast structure but in the single origin bean. The roaster’s job is to draw out the unique character of each green bean.
Pistol painstakingly developed a roasting system so precise that it guarantees consistency from day to day, season to season and year to year. This system takes into account critical variables affecting the acidity, flavour and body of our coffees.
We monitor barometric pressure, ambient air temperature, the density of the bean and the method of processing, whether water-washed or naturally processed with the sun’s help. This precision also makes Pistol’s technique sensitive to individual bean varietals so that roasting brings out the full flavour of any bean, whether it’s from Guatemala, Nicaragua or Mexico. In short, Pistol developed a formula for brewing a better cup of coffee, every time.
Of course, to brew a better cup you need to roast the best beans. That’s where Rudolph Burnes enters the picture. His seafaring family had long been in the business of travelling the globe in search of superior high grown arabica beans. These beans make the best coffee in the world. And to this day they are still the only beans we roast to Theodore Pistol’s precise formulation.
